Vienna
Located in the heart of Vienna's old town, Alquimia is a place for sharing where people come together to discover a new experience!
Gastronomic, Franco-Paraguayan cuisine.
We aim to transform and transcend the nature of traditional food and dining. Alquimia is a place for sharing and exchange, where people come together to discover the unknown. It's a story of symbiosis, between rustic and modern, but also centered on sensory experiences and cultural diversity. The alchemy is created from French techniques, blended with Paraguayan and French products. This fusion was born from the alchemy between two people, Mathilde Losilla and Horacio Zarate, the owners of Alquimia.
The story begins a stone's throw from the Avignon bridge, during their visit to La Mirande.
For those with a sweet tooth and especially a love of good food, the first ideas start flowing. The emergence of a unique and authentic concept appears.
"Hosting guests is what motivates me most; I want every customer to discover our story by browsing our menu." Mathilde LOSILLA, owner.
Several years passed and the opportunity to acquire their restaurant arose in March 2019.
Horacio, a chef, arrived in France 12 years ago with a degree in culinary sociology and a fascination for Paul Bocuse and Alex Atala. He took the plunge, working in numerous Michelin-starred restaurants in Paris.
One experience was enough, since afterwards he went on to work in a series of Michelin-starred restaurants and began his career as a chef.
As for Mathilde, originally from the Rhône Valley, a graduate and trained in the restaurant sector, wine has always been a part of her childhood.
From a very young age, his grandfather used wine as a medium to develop his sense of smell in order to search for the aromas of wine.
This little game has become fascinating for her: specializing in wine is a natural progression. Today, she enjoys complementing her husband's cooking with various pairings, creating "food and wine" combinations.
Proud to offer you a wine list with 220 references from the Rhône Valley, Burgundy, the Loire Valley, and not forgetting Latin America.
