In the winery, we focus on the technical side: explaining our methods and choices, we decipher here the genesis of our wines, from the harvest to the aging which takes place in the vaulted cellar of the estate, dating from the 16th century.
A visit to the estate's emblematic vineyard, Clos de Londres, marks the highlight of the tour. Located in the "Le Moulin-à-Vent" terroir, it offers a view of the historic windmill, an icon of the appellation. It is here, on this plot, that our most ambitious ventures began: from the transition to organic farming to the launch of massal selection and the creation of our first micro-cuvées, one grasps the very essence of the estate's existence and purpose.
During the tasting that followed in the Chapelle des Thorins, five wines were tasted. Three of them were our single-vineyard selections, an emblematic triptych of the estate: "Les Vérillats", "Champ de Cour" and "La Rochelle".
The tasting concludes with our micro-cuvée "Clos de Londres," made from grapes grown in the vineyard we just visited. Produced in fewer than 2.000 bottles, this cuvée is exclusively available at the estate and beautifully illustrates the power of the terroir.
